breakfast cereal

Ingredients:

  • 1 cup uncooked brown rice
  • 3/4 teaspoon salt
  • 1/2 cup raisins or dried cranberries
  • 1 teaspoon ground cinnamon
  • 2 1/4 cups water*
  • 3 cups fat free milk
  • 2 cups diced peaches
  • 4 ounces sliced or slivered almonds, preferably toasted

Preparation:

Combine rice, salt, raisins and cinnamon with water 2- to 3-quart saucepan. Bring to a boil; stir. Reduce heat, cover, and simmer 40 to 50 minutes, or until rice is tender and liquid is absorbed. Fluff with fork. Top with milk, peaches, and almonds.

Serves: 6

Note:
*For moister rice, add ¼ cup of water.

Note: Make Country Breakfast Cereal using leftover cooked brown rice. For 3 cups cooked rice, add raisins and cinnamon above, and heat in a saucepan or in your microwave oven until heated through. Top with milk, peaches and almonds.
