Ingredients:
- 1 lbs. – Catfish or Tilapia or other firm white fish
- 8 – Taco Shells, soft and/or hard shell. Tortillas can be used as well.
- 1/2 cup – Sour Cream, low fat
- 1/2 cup – Mexican Cheese Blend, low fat
- 3 – Tomatoes, plum
- 1 can – Chilies, green, chopped
- 2 – Limes, juiced
- 1/2 bunch – Scallion/Green Onions
- 1 cup – Iceberg Lettuce, shredded
- 3 Tbsp. – Olive Oil
- 2 Tbsp. – Cajun Spice
- 1 tsp. – Dried Cilantro
- 1 tsp. – Cumin
- 1 – Avocado, sliced (optional)
- Salt & Pepper (S&P) to taste
Preparation:
- Cut fish into 1 inch strips and toss with Cajun spices and 2 Tbsp. of oil.
- Bake in a 325 degree oven for 8-10 minutes or until done.
- Meanwhile, chop tomato and scallions.
- Mix tomatoes with cumin, 1 Tbsp. oil, juice of 1 lime, cilantro and S&P
- Build taco with favorite toppings in a soft or hard shell tortilla.
